Mike Hearnden

Bar and Cocktail Supervisor

Mike

I’ve been working in hospitality and bars for eleven years now, but I’ve never worked in a gin distillery. I love being around likeminded bar enthusiasts and I make a mean negroni. My favourite drink is a Whiskey sour which is fun and flavoursome and easy to drink. Unlike some of the team I don’t head to the dance floor I’ve got two left feet.

If Mikes working, ask if he can make you his perfect Whiskey Sour.

Mike’s Whiskey Sour

My recipe for a whiskey sour uses egg white which I think smooths of the sour and goes down so well. I also like the cherry for effect.

Ingredients

  • 50ml Bourbon
  • 35ml lemon juice
  • 12 ½ ml of sugar syrup
  • 2 dashes of angostura bitters
  • ½ fresh egg white
  • Ice
  • Lemon zest
  • Slice of orange
  • Maraschino Cherry
  • Tumbler

Method

  1. Put all of the ingredients in to a cocktail shaker.
  2. Shake all of the ingredients (except for the lemon zest) hard with ice.
  3. Strain into an ice-filled tumbler.
  4. Squeeze the lemon zest, shiny side down over the drink so the scented oils spray across the surface.
  5. Discard the zest.
  6. Add the slice of orange and the maraschino cherry to garnish.
