When I was first asked if I wanted to project manage a distillery from renovation into its launch and beyond I thought it was possibly too good to be true. But true it was and still is. This job has always had many facets and what I’ve learnt along the way is not always that useful but some of it has astounded me. My background has always been projects, building infrastructure and looking at how you market those projects. Bond Street continues to surprise me on a day to day basis with some of the strange requests I get, the excitement that the project has created locally and the challenges that opening such an ambitious project puts in front of me. It’s always fantastic working with visionary people and the founder Sally has that in abundance, her choice of team and associate companies has been excellent. 

Damion’s Recipe for a Pina Colada

I like my drinks to show a side of me that you wouldn’t necessarily get and so a classic Pina Colada is as 80’s as I am.

Ingredients

  • 35ml gold rum
  • 1 tbsp coconut-flavoured rum
  • 50ml of coconut cream
  • 50ml of pineapple juice
  • 1 maraschino cherry
  • A long glass

Method

  1. Mix the two rums, the coconut cream and pineapple juice into a cocktail shaker.
  2. Pour into the glass.
  3. Garnish with a maraschino cherry.

    • Friday and Saturday evenings are our busiest evenings and it is not always possible to seat guests though we will always try. It is always preferable to reserve a table to avoid disappointment.

    • If you are given a reservation you will have fifteen minutes to take up the table. If you do not arrive at that time we cannot guarantee to honour the booking and reserve the right to give the table to a waiting party.

      Please be aware that this form should not be used to communicate with us in regard to bookings for gin schools or bar table bookings. Be advised responses may take up to 72hrs.
